Muffin Pan Meatloaf

Here’s a quick and easyway to prepare meatloaf thatmy grandkidslove. They canhelp prepare itand since the meatloaf is cooked in separate portions in a muffin pan,it takes a lot less time to bake. This is a basic recipe that we use, and you can certainly modify it to fit your taste.

1 1/2 lbs. lean ground beef
1/2c favorite barbeque sauce
1/4c milk
1 egg
1c seaas a resultned bread crumbs or cracker meal
1 small chopped onion

In a large bowl combine all the ingredients except for 1/4 c barbeque sauce. Mix well. Your kids can help you here, mixing it with their hands. Brush a 12 muffin tin with vegetable oil. Spoon 1/2 c mixture into each tin. Bake 25 – 30 minutes at 400 degrees, then top each mini-loaf with the remaining barbeque sauce and bake just another 10 minutes.

Another suggestion is instead of the barbeque sauce, use chunky salsa and 1 T.taco seaas a resultning, and topthe meatloafwithshredded taco blend cheese for the last 10 minutes.
You might desire to place an aluminum lined foilpan under the muffin tins to catch any drips.
